    FICHA del GO VEGGIE CURED MEATS sobre el Desarrollo de análogos cárnicos de embutidos crudos-curados y jamón curado

    Se estima que la población humana superará los 10 mil millones de personas a principios del año 2050 y, si las tendencias de consumo no cambian, este incremento llevará implícito un aumento del 100% de la demanda de la proteína animal. Los análogos cárnicos se consideran una alternativa más sostenible a la producción industrial de carne. La popularidad y la gran demanda de análogos cárnicos se explica por el creciente número de consumidores que busca alternativas proteicas saludables, nutritivas y con un menor impacto ambiental. Este proyecto pretende desarrollar una línea de análogos cárnicos curados utilizando excedentes de cultivos de variedades autóctonas priorizando su calidad sensorial y nutricional. El desarrollo de estos productos va dirigido a apoyar: - Las pequeñas y medianas empresas del sector agrícola catalán, revalorizando y dando salida a la producción de cultivos no comercializables, ya sea por excedente de producción o por falta de adecuación a los estándares de calidad de la venta al por menor. - En las empresas de la industria agroalimentaria concienciadas de la necesidad de un cambio de modelo hacia un sistema de producción de alimentos más sostenible. Los productos desarrollados, gracias al uso de excedentes de cultivos de variedades autóctonas contribuirán a la reducción del desperdicio alimentario.

    A Bio-inspired Multilayer Drainage System

    Agricultural run-off and subsurface drainage tiles transport a significant amount of nitrogen and phosphorus leached after fertilization. alchemia-nova GmbH in collaboration with University of Natural Resources and Life Sciences, Vienna developed two multi-layer vertical filter systems to address the agricultural run-off issue, which has been installed on the slope of an agricultural field in Mistelbach, Austria. While another multi-layer addressing subsurface drainage water is implemented in Gleisdorf, Austria. The goal is to develop a drainage filter system to retain water and nutrients. Both multi-layer filter systems contain biochar and other substrates with adsorption properties of nutrients (nitrogen, phosphorus). The filter system can be of practical use if an excess of nutrients being washed out is of concern in the fields of the practitioner by keeping the surrounding waters clean. This approach may result in economic value by re-using the saturated biochar as fertilizer and improving the soil structure, thus increasing long-term soil fertility. FACTSHEET NANOCELLULOSE MEMBRANES FOR NUTRIENT RECOVERY Key information Functionalized nanocellulose membranes can take up nitrate and phosphate. These membranes can be put in a water treatment unit. As the membranes are biobased, degradable materials, they can after use be added to the soil, thus returning the leached nutrients back for their original purpose providing fertilizers (nutrient recycling).
